Crispy Lemon Za’atar Chicken with Eggplant & Tomato Roasted In Sweet Smoked Paprika on Grilled Flatbread (brushed with a little roasted garlic oil…yep…I made that!)… Tastaaaaay! I also made my version of the immaculate & ubërtasty Crispy Lemon Chicken with Za’atar & Turkish Pancake…minus the pancake. I won’t make the pancake until I get the kasseri cheese. In the interim, I paired the chicken with herbed quinoa & spinach tossed in a honey roasted garlic vinaigrette. My chicken came out perfect! Marbling included! I know my good friend and singerer extraordinaire (yep…singerer), Cleveland Jones, would be proud.
